Momma's Munchies

So my good friend Lindsey at Waking Up Williams started Momma's Munchies, which is basically a blog hop that helps to build up everyone's recipe collection.  I think it's brilliant! So, every Monday you post a new recipe based on the theme of that week and link back up to Momma's Munchies so everyone can enjoy!

This week's theme was seafood, but I don't seafood and apparently neither do a bunch of other people so we added chicken to the mix.  I got the idea for this recipe after attending a baby shower at a local country club.  It was a sit down lunch and they served the most amazing chicken dish, that I had to come home and try to duplicate it.  Turned out that my version was pretty delish too...so I hope you enjoy!

Bruschetta Chicken















Ingredients:
- 1 packet of Lipton Soup Savory Herb and Garlic
- 3 tbsp of olive oil
- 2 tbsp of water
- 4 boneless skinless chicken breast
- 3 roma tomatoes
- 1/2 sweet onion
- 2 garlic cloves (minced)
- 1tsp of basil
- 2 cups of balsamic vinaigrette

Instructions:
- Preheat oven to 375 degrees
- Mix Lipton Soup with water and 1tbsp of oil, brush on chicken and bake 20-30 minutes until done (depends on thickness of chicken)
- while chicken is baking, dice tomatoes and onion and mix together with 2 tbsp of oil, basil and garlic, let chill in refrigerator
- heat balsamic vinegar in a saucepan over medium heat and bring to a rolling boil. Whisk briskly to create balsamic reduction.  You will know that reduction is ready once it thickens and coats the back of a spoon
- Top chicken with tomato mixture and drizzle balsamic reduction over.

Note: I like to serve over a bed of white rice and a side of grilled zucchini and squash

Cook Time: 30-45 minutes
Yield: 4 servings
